Chinese Baked Fish Recipe

Chinese Baked Fish                     

1 whole (about 2 1/2 lbs) sea trout, sea bass, haddock, or red snapper, dressed.
3 T soy sauce
3 T dry sherry
3 green onions, trimmed and cut into 1/4 inch slices
1 teas minced fresh ginger root or 1/4 teas ground ginger
1 clove garlic, peeled and minced
1/4 teas sugar

Preheat oven to 350 degrees...Make cuts in the fish,about 1 inch apart, through the flesh and down to the bone, from the gills to the tail. do this on both sides of the fish.

In a small bowl, combine the soy sauce, sherry,green onions, ginger, garlic, and sugar. Place the fish in a buttered 8x8x2 baking dish, and sprinkle the mixture evenly over the fish...bake uncovered for 20 minutes or longer depending on the thickness of the fish...when the fish flakes easily when ested with the fork it is done.
