Fish Steak with Onion
Swordfish or shark baked with a cloak of wine and onions. Superb!
1 lb fish steaks
2 cups sliced onions
1 Tbsp butter
1 Tbsp oil
Fresh thyme or oregano
Salt and pepper
1/4 cup bread crumbs
1 Tbsp chopped parsley
1/3 cup dry white wine
Sauté onions in butter and oil until tender and translucent. Season and add
fresh oregano or thyme. Set aside.
Season the fish steaks, dredge with flour and brown. Arrange fish in baking
dish, cover with the onions, and top with bread crumbs mixed with parsley. Pour
wine around fish. Bake steaks at 350 degrees F. about 25-35 minutes, basting
occasionally until the top has browned lightly.
