1 1/2 c cubed cooked lobster
1 med onion, chopped fine
2 green peppers, seeded and chopped fine
1/2 Scotch Bonnet Chile, seeded and minced
1 c olive oil
1/4 c cider vinegar
2 tsp chopped cilantro
Combine all ingredients and chill for 3 hours. Drain and serve on crackers.
