Mushroom Stuffed Mackerel
1 (4 lb.) mackerel
Salt and pepper to taste
1 med. onion, chopped
1 tbsp. chopped parsley
1/2 c. mushrooms, sliced
1 c. soft bread crumbs
6 tbsp. butter or oil
1 tsp. fresh chopped or dried mint
Sprinkle fish with salt and pepper. Cook onion, parsley and mushrooms in 3
tablespoons oil, about 5 minutes. Add to bread crumbs and mint, season with salt
and pepper. Stuff fish with mixture and sew opening closed or use toothpicks.
Cut several gashes in skin. Put remaining oil in baking dish and add fish. Bake
at 350 degree oven 45 to 50 minutes. Serves 4.
