Pan-Fried Catfish with Pecan Butter Recipe

Pan-Fried Catfish with Pecan Butter  


2 large catfish filets
2 T. Flour
2 T. Cornmeal
salt and pepper
1/3 cup chopped pecans
1/4 cup chopped parsely
Juice from half of a lemon
1 T. Butter
salt and pepper
Oil for frying


Heat a 1/4 inch of oil or shortening in a large frypan. Combine flour, cornmeal, salt and pepper. Dredge fish in flour mix, shake off any excess and carefully lower into hot oil in the frypan. Cook 3-5 minutes on first side, moving pan around to ensure fish does not stick to pan. When browned and slightly crisp, turn fish and cook other side for 3-5 minute, depending on thickness of filets.
Meanwhite, transfer a few tablespoons of the frying oil to a small fry pan. Add pecans and saute for a few minutes. Stir in fresh parsely and lemon. Add a tablespoon of butter and season with salt and pepper to taste.
Plate up catfish and spoon the pecan butter atop. Serve with your favorite veggie and starch.
