Herring and Red Pepper Rolls Recipe

Herring and Red Pepper Rolls  


2 (6 oz) herring or mackerel fillets, fresh or defrosted
1 red canned pimiento, quartered
flour for dusting
salt and black pepper
1and a half oz crumb crust for fish or dried breadcrumbs
grated rind and juice of 1 lime
1 egg, beaten
vegetable oil for frying


Trim the fish and dust in seasoned flour.Mix together the crumb crust with grated rind and juice of half a lime.Lay a segment of pepper along the skin side of each fish and roll up with the pepper on the inside. Dip the rolled fish in beaten egg and coat in the crumb mixture.Shallow fry for 3-4 minutes each side.Serve with a squeeze of lime, new potatoes and green beans.
