Schmaltz Herrings Recipe


Schmaltz Herrings  
 

Ingredients:
8 pickled rollmop herrings, drained
1 medium onion, skinned and thinly sliced
2 dessert apples, peeled, cored and sliced lemon juice
5 fl oz (142 ml) soured cream
salt and freshly ground pepper
4 gherkins, finely chopped
cayenne pepper


 

Directions:
1. Slice the herrings in rings and arrange them on a flat serving dish.
2. Place the onions over the fish. Toss the apples in a little lemon juice and place on top of the fish and onion.
3. Spoon over the soured cream mixed with the seasoning and gherkins.
4. Sprinkle with a little cayenne pepper before serving.
