2 cups all-purpose flour
1/2 cup sugar
1/2 tsp. baking powder
1/2 tsp. salt
1 cup butter
2 egg yolks, slightly beaten
3/4 cup sugar
1/4 cup all-purpose flour
1 tsp. ground cinnamon
1/4 tsp. ground nutmeg
4 medium apples (such as Golden Delicious, Rome, Granny Smith or Jonathan)
peeled, cored and sliced (4 cups)
In a large bowl, stir together the 2 cups flour, 1/2 cup sugar, baking powder,
and salt. Cut in butter until pieces are the size of small peas. Stir in the egg
yolks with a fork. Press half of the mixture (about 2 cups) into the bottom of
an ungreased 13x9x2-inch baking pan; set aside.
In another large bowl, stir together the 3/4 cup sugar, 1/4 cup flour, cinnamon,
and nutmeg. Add apples and toss to coat. Arrange evenly over mixture in pan.
Sprinkle remaining crumb mixture evenly over apple mixture. Bake in a 350º oven
about 35 minute or until topping is golden. Cool in pan on wire rack. Drizzle
with Icing. Let stand until set. Cut into bars. Makes 24.
