Butter Thumbprint Cookies Recipe

1 cup butter, softened
1/2 cup granulated sugar
1/4 teaspoon salt
2 1/4 cups all-purpose flour
1 egg yolk
1 teaspoon vanilla extract
1 cup chopped pecans (optional)
Jelly for filling

Preheat oven to 350 degrees F.

Cream butter with sugar and salt; add flour, egg yolk and vanilla extract, mixing until a smooth dough forms. Wrap well and refrigerate 1 hour or overnight. Roll into1-inch balls; re-roll in pecans, if desired. Press thumb into center of each ball.

Bake until lightly browned around the edges 12-15 minutes. Fill centers with jelly.

Makes 3 1/2 to 4 dozen cookies.
