Braised Leg of Lamb

Ingredients:
1 leg of lamb (de-boned)
1 package bacon (ca. 5 oz / 150 g)
8 oz (150 g) shallots
2-½ Cups (5 dl) dry white wine
4 Sprigs of Rosemary
4 Bay leaves
1 bunch thyme
Salt and freshly ground pepper
2-3 sprigs of parsley
(8 oz / 250 g parsley roots or parsnips, peeled
Preheat oven to 350° F (150° C)
Directions:
Rub the leg of lamb with salt and freshly ground black pepper. In a Dutch oven,
brown the leg of lamb on all sides. Add the bacon (cut into large pieces) and
the shallots and braise a few minutes. Add the peeled parsley roots or parsnips
and white wine. Bring to a boil, cover and remove from heat. Place the Dutch
oven in the oven at 350° F (150° C) for 3-½ to 4 hours.
Remove the stock from the lamb, place in a saucepan, skim off the fat, and boil
to reduce to about one-half. Add a little cream and gravy thickener if you wish.
Slice the lamb and serve with mashed potatoes and your favorite vegetables.
