Cumin Spice Crusted Leg of Lamb Recipe


Cumin Spice Crusted Leg of Lamb        
 

Ingredients:
1 leg of lamb (3 lbs. trimmed)
1 teaspoon salt
1 teaspoon pepper
¾ teaspoon cumin
1 teaspoon garlic powder
½ cup broth
½ cup bread crumbs
1/8 cup broth

Directions:
Trim as much fat as possible off lamb. Combine salt, pepper, cumin, and garlic. Rub lamb with spice mixture. Place, fat side up, on rack in shallow roasting pan. Insert meat thermometer. Roast at 450° for 30 minutes.

Reduce temperature to 350° . Roast, basting a few times with the broth until temperature reaches 160° . Approximately 1 hour. Remove lamb from oven. Cover evenly with bread crumbs. Pour 1/8 cup broth into pan. Turn off oven. Return lamb to oven for 15 minutes. Remove.
