Gin Soaked Lamb Chop Lollipops

Ingredients
Marinade
1 Rack Of New Zealand Lamb Chops (Frenched)
2 Tblsp. Garlic.
2 Tblsp Fresh Rosemary
2 Cups Quality Gin
Cracked Black Pepper
Let Stand For At Least 1/2 Hr. And Up To 24 Hr.

Dry Rub For Chops
1/4 Cup Paprika
2 Tbspl. Kosher Salt
2 Tblsp Cracked Black Pepper
3 Tblsp Lavender,
Tblsp Thyme
1 Tblsp Garlic Powder(Not Salt)
Mix Together Keeps For 30 Days
 

 Directions
Heat Oven To 325 Degrees Heat Oil In Oven Proof Saute Pan Dry The Lamb Rack And Apply Dry Rub And Rub Into Meat. Sear In Hot Pan Until Just Lightly Blackened Turn And Finish In A Heated 325 Degree Oven For Aprx. 12 Min. Remove From Pan To A Cutting Board And Let It Rest Before Slicing.
 


Tomato Mint Jam
Sweat 4 Cups Of Diced, Peeled And Seeded Tomatoes, Let The Juice Cum Out Than Add About 1 Cup Sugar And A Dash Of Good Quality Vodka (Grey Goose Or Kettle One).
Simmer Until It Has A Little Body To It , Add A Dash Of Fresh Mint Chiffonade (Sliced Very Thin) And Remoce From Heat And Chill
Spoon A Tblsp Onto Each Lamb Chop And Garnich With A Little Parsley
It Seems Like A Long Ways To Go For This Recipe But Believe Me , It Is Really Not That Hard. Everyone Will Rave And You Will Be A Star !!!!!
