Lamb Chops with Sweet Cherry Sauce

Succulent sweet cherries are the perfect match for tender grilled lamb chops.
Ingredients:
1/3 cup currant jelly
2 tablespoons cider vinegar
2 tablespoons orange juice
2 to 3 teaspoons chopped fresh tarragon
or 1/2 to 1 teaspoon dried tarragon leaves
3/4 cup sweet cherries, pitted, coarsely chopped*
8 lamb loin chops (3/4 to 1 inch thick)
1/2 teaspoon salt
1/2 teaspoon coarsely ground black pepper
Directions:
GRILL DIRECTIONS: Heat grill. In small saucepan, combine jelly, vinegar, orange
juice and tarragon. Cook over medium heat 5 to
8 minutes or until jelly melts, stirring frequently. Reserve 1/3 cup sauce
mixture in small bowl. Stir cherries into sauce in saucepan; set aside. Sprinkle
both sides of lambs chops with salt and pepper.
When ready to grill, place lamb chops on gas grill over medium heat or on
charcoal grill 4 to 6 inches from medium coals. Cook 10 to 12 minutes or until
of desired doneness, turning once and brushing frequently with reserved 1/3 cup
sauce. To serve, spoon cherry sauce over lamb chops.
4 servings.
BROILER DIRECTIONS: Prepare sauce and lamb chops as directed above. Place lamb
chops on broiler pan, Broil 4 to 6 inches from heat for 10 to 12 minutes or
until of desired doneness, turning once and brushing frequently with reserved
1/3 cup sauce. To serve, spoon cherry sauce over lamb chops.
TIP:
* Frozen sweet cherries, thawed, can be substituted for fresh cherries.
