Lamb Shank Tandoori with Apricots

Ingredients:
4 lamb shanks
16 dried apricots (soaked in water)
2 Tbsp. Tandoori*
2 stalks celery, sliced
2 tsp. ginger, minced
1 lb. brown mushrooms, sliced
4 turnips, peeled and cut in cubes
2 onions, peeled and sliced
6 garlic cloves, minced
1-1/2 c. white wine
Directions:
Season lamb shanks with salt and pepper. In a sauté pan or roasting pan, add 3
tbsp. oil. Add lamb shanks and brown on all sides. Add Tandoori and place in a
400° oven for 20 minutes. In the meantime, sauté onions until golden. Add
turnips, mushrooms, celery and ginger, cook for 2 minutes. Add wine and
apricots. Pour over shanks. Return to oven and bake for 1-1/2 hours. The meat
should be tender. Adjust seasoning with salt and pepper.
