Sicilian Lamb Chops
Ingredients:
4 lamb shoulder chops
2 tablespoons lemon juice
1 teaspoon dried oregano leaves
2 cup dry bread crumbs
2 tablespoons salad oil
1 clove garlic
2 teaspoon salt
¼ teaspoon black pepper
¼ cup minced parsley
lemon slice and parsley to garnish
Directions:
Brush lamb chops on both sides with lemon juice. Sprinkle with the oregano.
Place on foil covered pan on metal serving tray. Broil 4 inches from heat source
for 8 to 10 minutes on each side. Meanwhile, mix crumbs, oil, garlic, salt,
pepper, and parsley. Place chops on heat proof serving tray. Sprinkle with bread
crumbs. Just before serving, place under broiler 5 to 6 inches from heat and
brown crumbs for 2 to 3 minutes. Garnish with lemon slice and parsley sprig.
