Albondigas

Ingredients:
2 pounds ground beef
1 whole onion -- chopped
5 cloves garlic
1/2 cup Branacrisps -- crushed
1/3 cup cilantro
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cumin
1 teaspoon oregano
5 quarts beef/chicken broth
15 ounce can of tomatoes
3 ounces carrot -- shredded
8 ounces green beans
1 cup celery -- sliced
2 whole eggs

Method:
In food processor place the following ingredients:
6-7 Branacrisps, crushed, eggs,onions and garlic,cilantro and all seasonings pulse until fairly smooth. Pour this over the meat. Mix and make small meatballs. Brown in skillet.

Place broth in large soup pan, when boiling add meatballs and cook for about 1 hour. Add veggies except carrot (add last 3 minutes) cook veggies for about 15 minutes. Serve with chopped green onions and diced avocado in each bowl, Pass the cilantro and lime or lemon wedges.

NOTES : This recipe was adapted from the original given to me by my husband's mother over 40 years ago. It had rice as the filler in the meat balls and in the soup.I added some other veggies
