Marmalade Cheese Muffins

Ingredients:
2-cups (500 ml) flour
2-tsp (10 ml) baking powder
1/4-tsp (1 ml) salt
1/3-cup (80 ml) margarine
2/3-cup (160 ml) brown sugar
1-egg
2-tsp (10 ml) orange peel
2/3-cup (160 ml) milk
1/2-cup (125 ml) cream cheese, softened
2-tbsp (30 ml) icing sugar
1/2-cup (125 ml) orange marmalade
3-tbsp (45 ml) nuts, chopped
Direction:
Preheat oven to 375 ºF (190 ºC). Butter or line large muffin-pan cups with paper
cups. Set aside.
In a bowl, mix flour, baking powder and salt. Set aside.
In a second bowl, whip margarine and brown sugar. Fold in egg and orange peel.
Gradually mix in flour mixture and milk. Set aside. In a third bowl, mix cream
cheese and icing sugar. Set aside.
Half-fill muffin cups with first mixture. In the center of each muffin, spoon 4
tsp (20 ml) cheese mixture, then 1 tbsp (15 ml) marmalade. Fill muffin cups with
remaining batter. Garnish with chopped nuts. Bake in oven 25-30 minutes. 8 large
muffins.
