Peachy Poppy Seed Muffins

The easy addition of poppy seeds gives a crunchy texture to these muffins.
Ingredients
2/3 cup butter or margarine, softened 150 mL
1 cup granulated sugar 250 mL
2 eggs 2
1/2 tsp vanilla 2 mL
1 1/4 cups ROBIN HOOD® All Purpose Flour 300 mL
2 tbsp poppy seeds 30 mL
1 tsp baking soda 5 mL
1/4 tsp salt 1 mL
3/4 cup peach baby food 175 mL
Instructions
PREHEAT oven to 350ºF (180ºC). Cream butter and sugar. Add eggs and vanilla; mix
well.
COMBINE flour, poppy seeds, baking soda and salt. Add to creamed mixture,
alternately with baby food. Spoon batter into paper-lined or greased muffin
cups, filling 2/3 full.
BAKE at 350ºF (180ºC) for 20-25 minutes, or until top springs back when lightly
touched. Cool 10 minutes, then remove from pans; transfer to racks and cool
completely.
TIP
Try other fruit baby foods such as apricot or apple. |
