Pineapple Cream Muffins

Ingredients:
2 cups flour
2 tsp baking powder
1/2 tsp baking soda
3 1/2 oz vanilla instant pudding mix
2/3 cups brown sugar
1 egg beaten
1 cup sour cream
8 oz crushed pineapple with juice
1/2 cup oil
Directions:
Set oven to 425o
Pam 15 muffin cups
Sift together flour baking powder baking soda and the pudding mix, stir in brown
sugar
Combine egg and sour cream, fold in pineapple and oil
Add to the egg pineapple mixture to the flour mixture stirring JUST until
combined batter will be thick]
Spoon batter evenly into muffin tins and bake for 14-17 min or until muffins
test done.
