S'mores Jumbo Muffins

Ingredients:
1 1/2 cups flour
1/2 cup graham cracker crumbs (8 squares)
1 tsp. baking soda
1/2 tsp. salt
1 egg
1 1/2 cups buttermilk
1/4 cup vegetable oil
3/4 cup semi sweet chocolate chips
1 1/4 cup miniature marshmallows divided

Directions:
In large bowl combine dry ingredients, combine egg & butter & oil-mix well. Stir into dry ingredients just until moistened. Fold in Chocolate chips & 1 cup marshmallows. Fill greased jumbo muffin cups 3/4 full. Sprinkle with remaining marshmallows. Bake at 375 degrees for 18-20 minutes. Cool 5 minutes before removing from pan to a wire rack. Serve warm. yields: 6 muffins
