Couscous Paelia Recipe


Couscous Paelia

Ingredients:
1 large (about 1/2 lb.) onion, chopped
1/2 pound linguisa sausage, sliced thin
1 bottle (8 oz.) clam juice
1 1/4 cup regular-strength chicken broth
2 teaspoons cumin seed
1 1/2 cups couscous
1 small red bell pepper, stemmed, seeded, and chopped
1/3 pound shelled cooked tiny shrimp, rinsed and drained

 

Directions:
In a 10- to 12-inch frying pan over medium heat, stir onion and sausage often until browned, 10 to 15 minutes. Add clam juice, broth, and cumin. Bring to a boil; stir in couscous. Cover pan; remove from heat. Let stand until liquid is absorbed, about 5 minutes. Stir in bell pepper and top with shrimp.

Serves 4 to 6.
