One Pan Frittata Dinner
Ingredients:
2 Cups potatoes, coarsely chopped
1 Cup chopped vegetables ( onions, broccoli, mushrooms, peppers or zucchini)
6 Eggs, beaten
1 Cup pre-shredded Mexican blend cheese in the package
:Directions:
Place potatoes (no need to remove skin) in frying pan; cover with cold water.
Bring to boil and simmer until potatoes are soft. Drain.
Fry chopped vegetables in pan with potatoes.
Add eggs and cheese. Cook on low heat for 15 minutes. Cover for 5 minutes or
until centre is cooked.
Serves 6
