Orange Meringue Pie Recipe

Orange Meringue Pie

1-9 inch baked pie shell
1 cup sugar
3 tbs. cornstarch
3 egg yolks, slightly beaten
3 tbs. butter
1 1/2 cups orange juice
1 to 3 tsp lemon juice, if orange juice is sweet
meringue for one pie

Heat oven to 400 degrees F.

Stir together sugar and cornstarch in a medium
saucepan. Blend egg yolks, orange juice. Gradually stir into sugar mixture. cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir for 1 minute. remove from heat and stir in the butter, lemon juice, Pour right away into the pie shell. Heap meringue onto hot pie filling. Spread over filling very carefully sealing edge of crust. Bake till golden brown.
