Worth The Effort Peanut Butter Pie

Ingredients
1/3 cup peanut butter
3/4 cup confectioners sugar
1/3 cup flour
2 cups milk; scalded
1/2 cup white sugar
1/8 teaspoon salt
3 egg yolks
1/2 teaspoon vanilla
2 tablespoons butter or margarine
1/4 teaspoon cream of tartar
1/2 cup sugar
1 teaspoon cornstarch
1 baked 9 inch pie shell
Method
Combine peanut butter with confectioners sugar and mix until mealy. Sprinkle 2/3
of this mixture on baked pie shell. Combine flour, white sugar (1/2 cup) and
salt in top of double boiler and stir into this mixture scalded milk. Cook over
boiling water stirring constantly until thickened. Stir small amount of cooked
filling into egg yolks and combine with remaining mixture. Cook several more
minutes.
Add melted butter and vanilla; pour into pie shell.
Beat 3 egg whites until stiff and shiny; add 1/4 teaspoon cream of tartar, 1/2
cup sugar and 1 teaspoon cornstarch. Continue beating until peaks form. Cover
pie sealing edges well and sprinkle with remaining crumbs. Brown.
