Zabaglione Pie

Time needed: 1 hour and 20 minutes Difficulty: medium
INGREDIENTS FOR 8-10 SERVINGS
1/2 cup of flour
1/2 cup of potato starch
1/2 cup of sugar
3 eggs
4 tablespoons of butter
Filling:
5 egg yolks
3/4 cup of Marsala
1/2 cup of white wine
3 tablespoons of flour
1 cup of heavy cream
4 tablespoons of Grand Marnier
Decoration: 1/2 cup of bittersweet chocolate 1/2 cup of heavy cream
. Grease and flour a 12-inch round cake pan. Preheat the oven to 350°F.
. In a bowl, whisk eggs and sugar with an electric mixer, until pale and thick.
Sift flour and potato starch; delicately mix in egg mixture. Stir in the melted
butter.
. Pour into the cake pan and bake for 30-40 minutes. When ready, turn cake onto
a rack and cool.
. Prepare the filling: In a saucepan, heat wine and Marsala. In a bowl, mix egg
yolks and sugar with a wooden spoon. Stir in the flour and, slowly, the hot
wine. Transfer to a saucepan and stirring continuously, bring to a boil. Cook
cream for 3-4 minutes on low heat. Cool cream completely, mixing from time to
time.
. Slice cake in half. Brush 1 circle with Grand Marnier and cover with 1/3 of
filling cream. Cover with the second circle, brush with Grand Marnier and cover
cake with cream.
. To decorate, melt chocolate and cream in a double boiler. Pour in a paper cone
and design a chocolate spiral on cake. With a toothpick, starting at the center,
draw lines through the chocolate circles.
. Transfer to a serving plate and refrigerate.
