Guava Chiffon Pie
Ingredients:
1 envelope unflavored gelatin
1/4 c. cold water
4 eggs, separated
2 Tbsp. sugar
1/4 c. lemon juice
1/8 tsp. red food coloring
1 (6 oz.) can frozen guava juice (Hawaii's own brand)
1/4 tsp. salt
1/2 c. sugar
9-inch baked pie shell
whipped cream
Method:
Sprinkle gelatin on cold water to soften. Beat egg yolks until thick and lemon
colored. Beat into eggs, 2 tablespoons sugar and 1/4 cup lemon juice. Cook over
low heat until thickened, stir constantly. Stir in softened gelatin and remove
from heat. Cool slightly, then add thawed guava concentrate and food coloring.
Chill until it starts to thicken. Beat egg whites with salt until soft peaks
form. Gradually add 1/2 cup sugar, beating until soft and glossy. Fold in guava
mixture. Pour in pie shell and chill thoroughly. May top with sweetened whipped
cream.
Serves 6.
