Macadamia Nut Pie
Ingredients:
Crust:
1 cup vanilla wafer crumbs
1/4 cup margarine, melted
Filling:
16 oz cream cheese, softened
1/3 cup sugar
2 Tbsp milk
2 eggs
1/2 cup macadamia nuts, toasted
Garnish:
8 1/2 oz crushed pineapple, drained
1 kiwi, peeled and sliced
Method:
Combine crumbs and margarine; press onto bottom of 9-inch springform pan. Bake
at 350 degrees F. for 10 minutes. Cool. Combine cream cheese, sugar and milk,
mixing at medium speed in electric mixer until well blended. Add eggs, one at a
time, mixing well well after each addition. Stir in nuts; pour over crust. Bake
at 350 degrees F. for 45 minutes. Loosen cake from rim of pan; cool before
removing rim of pan. Chill. Before serving, garnish with fruit.
