Strawberry Chocolate Pie

6 cups sliced strawberries (about 2 1/2 pounds)
2 tablespoons water
3/4 cup sugar
3 tablespoons cornstarch
1 tablespoon lemon juice
9-inch pre-made chocolate crust
Purée 2 cups sliced strawberries and water in food processor fitted with the
steel blade. Transfer puree to saucepan. Whisk together sugar and cornstarch.
Add to the strawberry mixture and stir to combine.
Place pan over medium heat and cook until boiling. Reduce heat and simmer over
low, stirring constantly, for 1 minute. Mixture will be thickened.
Remove and allow to cool for 20 minutes. Fold in remaining 4 cups sliced
strawberries that have been tossed with lemon juice.
Transfer strawberry mixture into the chocolate crust. Cover and refrigerate
until firm. To serve, cut pie into 6 slices and top slices with whipped cream.
