Apricot Pork Medallions

Recipe by: American's Pork Producers
1 lb Pork tenderloin medallions; cut 1 " thick
1 tbs Butter; plus
1 ts Butter
1/2 c Apricot jam
2 Green onions; sliced
1/4 ts Dried mustard
1 tbs Cider vinegar
Flatten medallions slightly. Heat 1 Tablespoon of butter over Medium-High heat
in a skillet. Saute pork about 2 minutes on each side. Remove from pan. To
juice, add 1 tsp. bitter, apricot jam, green onions, mustard and cider vinegar.
Cover and simmer for 3-4 minutes. Add pork to heat through.
Serve with buttered noodles. and green salad.
