Brie-Filled Pork Chops with Apple

Ingredients:
4 (4-ounce) boneless center-cut pork loin chops
2 ounces Brie cheese
2 tablespoons all-purpose flour
1/2 teaspoon pepper
1/2 teaspoon paprika
Vegetable cooking spray
2 teaspoons vegetable oil
3/4 cup canned no-salt-added chicken broth
3/4 cup unsweetened apple cider
2 cloves garlic, halved
2 sprigs fresh rosemary
2 cups herb-seasoned stuffing mix
1 1/3 cups chopped Red Delicious apple Apple wedges (optional)
Fresh rosemary sprigs (optional)
Directions
Cut a pocket in one side of each chop, cutting to but not through, remaining 3
sides. Cut cheese
into 4 portions; place 1 portion of cheese into each pocket. Secure openings
with wooden picks.
Combine flour, pepper, and paprika; dredge chops in flour mixture.
Coat a large oven-proof skillet with cooking spray, and add oil. Place over
medium heat until hot. Add chops; cook 3 minutes on each side or until browned.
Remove from skillet. Wipe drippings from skillet with a paper towel, if
necessary.
Combine broth, cider, garlic, and 2 rosemary sprigs in skillet; bring to a boil.
Boil 1 minute; remove and discard garlic and rosemary. Add stuffing mix and
chopped apple, stirring well. Return chops to skillet. Cover and bake at 350°
for 30 minutes or until chops are tender. If desired, garnish with apple wedges
and fresh rosemary sprigs. Yield: 4 servings (420 calories per serving).
