Brie-Filled Pork Chops with Apple Stuffing

4 (4-ounce) boneless center-cut pork loin chops
2 ounces Brie cheese
2 tablespoons all-purpose flour
1/2 teaspoon pepper
1/2 teaspoon paprika
Vegetable cooking spray
2 teaspoons vegetable oil
3/4 cup canned no-salt-added chicken broth
3/4 cup unsweetened apple cider
2 cloves garlic, halved
2 sprigs fresh rosemary
2 cups herb-seasoned stuffing mix

1 1/3 cups chopped Red Delicious apple Apple wedges (optional)
Fresh rosemary sprigs (optional)

Cut a pocket in one side of each chop, cutting to but not through, remaining 3 sides. Cut cheese
into 4 portions; place 1 portion of cheese into each pocket. Secure openings with wooden picks.

Combine flour, pepper, and paprika; dredge chops in flour mixture.

Coat a large oven-proof skillet with cooking spray, and add oil. Place over medium heat until hot. Add chops; cook 3 minutes on each side or until browned. Remove from skillet. Wipe drippings from skillet with a paper towel, if necessary.

Combine broth, cider, garlic, and 2 rosemary sprigs in skillet; bring to a boil. Boil 1 minute; remove and discard garlic and rosemary. Add stuffing mix and chopped apple, stirring well. Return chops to skillet. Cover and bake at 350 for 30 minutes or until chops are tender. If desired, garnish with apple wedges and fresh rosemary sprigs. Yield: 4 servings (420 calories per serving).
