Cranberry Pork Roast
Ingredients:
2-3lbs boneless pork loin roast
1t black pepper
1c whole cranberry sauce
1/4c brown sugar
2t lemon rind, finely grated
1T lemon juice
Method:
Place roast in a small roasting pan and score top. Sprinkle with pepper. Insert
meat thermometer into the centre of the roast. Roast uncovered in a 325F oven
for about 30 minutes. Combine remaining ingredients and spread over roast.
Continue cooking, basting every 10 minutes with pan drippings for another 30-40
minutes until meat thermometer reads 160F. Turn oven temperature to 425F for 4-5
minutes to glaze the roast. Let roast stand 10 minutes before slicing. Drizzle
pan drippings over roast slices when serving.
