Stuffed Maple Orange Pork Chops
Ingredients:
6 rib pork chops, 1 1/2-inches thick with pockets
1 c. chopped celery
1/2 c. chopped onion
1/4 c. butter
1 c. sliced mushrooms
1 tsp. salt
1/2 tsp. poultry seasoning
1/4 tsp. pepper
1 c. maple syrup
1/2 c. orange juice
Method:
Saute celery and onion for 5 minutes in 2 tablespoons butter. Add mushrooms and
saute 5 minutes more. Remove from heat and stir salt, poultry seasoning and
pepper. Cool slightly, then spoon mixture into pockets of pork chops.
In a heavy skillet saute chops over low heat in 2 tablespoons butter, 5 minutes
per side. Add maple syrup and
orange juice. Cover and simmer 20 minutes. Remove cover and continue cooking 10
minutes more, basting frequently with pan juices.
