Peach Cobbler Pork Chops

Ingredients:
6 pork chops -- 3/4" thick
2 teaspoons olive oil
salt & pepper -- to taste
1/4 shallots -- sliced thin
1/2 cup orange juice -- thawed
3 tablespoons lemon juice
1/2 cup Carol Hall's Peach Cobbler Jam
Directions
Brown pork chops in a heavy skillet with olive oil until golden on both sides.
Salt & pepper to taste. Remove from pan, adding shallots and saute until
translucent. Now add orange juice, lemon juice, and half of the jam. Return pork
chops to pan. Cover, reduce heat & cook for 15 to 20 minutes. Add remaining jam
and more orange juice if needed. Cover and cook 10 minutes longer. Remove chops,
place on a platter and keep warm. If needed, reduce sauce further, then pour
over the chops and serve.
Notes: Carol Hall's Peach Cobbler Jam comes in a decorative round jar, makes a
fantastic gift, and can be used to create these finger-licking good pork chops!
Serving Ideas: Suggest: Garnish plate with fresh pineapple sage blossoms.
