Pork with Rosemary and Mushrooms Recipe


Pork with Rosemary and Mushrooms

Ingredients:
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon freshly-cracked pepper
2 teaspoons fresh rosemary leaves
3/4 pound pork tenderloin or lean pork loin
2 tablespoons butter
1 tablespoon vegetable oil
1 medium onion, chopped or thinly sliced
1/2 cup pink or white wine
1/4 pound fresh mushrooms, thinly sliced


Directions:
Cut pork into1-inch pieces. Combine flour, salt, pepper and rosemary; dredge pork pieces in flour mixture.
Sauté pork in butter and oil in a Dutch oven for one minute on each side. Remove pork. Add onion; cook 1- 2 minutes. Stir in wine; simmer 3 minutes. Stir in mushrooms. Add pork; cover and simmer 5 minutes on each side.

Serve over hot, cooked white rice
