Roquefort Stuffed Chops
Ingredients:
1 generous Tbsp. minced onion
1/2 c. thinly sliced mushrooms
3 Tbsp. butter
1 c. tiny bread cubes
1/2 c. crumbled Roquefort cheese
4 pork chops (1-inch thick with pockets)
salt and pepper
paprika
Method:
Saute onion and mushrooms in butter for about 5 minutes. Do not brown. Remove
from heat and cool to lukewarm. Preheat oven to 350 degrees. Add the bread cubes
and cheese to onion mixture, stirring until blended. Stuff the chops and fasten
with wood picks and string. Season both sides with salt, pepper and paprika.
Bake uncovered for about 45 minutes. Remove picks and string and serve. Makes 4
servings.
