Roasted Rosemary Pork with Asparagus

Ingredients:
3 large cloves garlic, minced
4 tsp. fresh rosemary, chopped
1/2 tsp. salt
1/2 tsp. pepper
3 tbs olive oil
2 tbs Dijon mustard
2 tbs fresh lemon juice
1 center cut pork loin; about 5 pounds
2 pounds fresh asparagus, trimmed and blanched
 

Directions
Oven to 400°.
Mix garlic, rosemary, salt, pepper, olive oil, mustard and lemon juice in small bowl. Reserve 1 Tablespoon. Spread remainder over fat side of pork. Place roast with fat side up on wire rack in roasting pan. Place in oven and then reduce heat to 325° and roast uncovered for 2 hours.

Toss asparagus with reserved garlic mix. Arrange around roast and cook uncovered the last 15-20 minutes
