Avocado and Cantaloupe Salad with Lime
Dressing

1/2 medium cantaloupe
1 large avocado
Boston lettuce leaves
grated lime rind for garnish
---- Lime Dressing ----
2 tablespoons lime juice
1/4 teaspoon salt
1/8 teaspoon dry mustard
1 pinch cayenne pepper
1 tablespoon almond oil
3 tablespoons salad oil
1. Scoop out and discard cantaloupe seeds. Peel and slice into thin crescents.
2. Halve, seed, and peel avocado. Thinly slice lengthwise.
3. Alternate cantaloupe and avocado slices on lettuce leaves on serving plate or
4 individual salad plates. Drizzle with Lime Dressing. Sprinkle with lime rind
and serve at once.
Lime Dressing: In a small bowl mix lime juice, salt, mustard, and cayenne. Using
a whisk or fork, gradually beat oil until well combined.

NOTES : The accent of lime juice and rind gives this pretty salad a Mexican
touch. To make it a more substantial first course, add one or two rolled slices
of prosciutto or Black Forest ham to each serving.
