Icy Fruit Cups With Lemonade

Lemonade, lime splashed mineral water and summer fruit slices are frozen in cups for a summertime treat.
Preparation 20 min.  Freezing 8 hrs.


Ingredients:
4 medium (2 cups) ripe plums, pitted, sliced 1/4-inch
3 medium (2 cups) ripe peaches, pitted, sliced 1/4-inch
3 small (1 cup) ripe apricots, pitted, sliced 1/8-inch
1 cup seedless green grapes
1 (6-ounce) can frozen lemonade concentrate, thawed
2 cups lime-flavored mineral water

 


Instructions:
Combine all fruit in large bowl; toss lightly. Divide fruit mixture among 6 cups. Stir together lemonade and mineral water in pitcher; pour over fruit in cups. Cover; freeze 8 hours or overnight.
VARIATION:
Frozen Fruit Salad: Prepare and place fruit in 8-inch square pan; pour lemonade over fruit. Freeze as directed above. Cut into squares.
Yield: 6 servings
