Orange-Almond Garden Salad

Dressing Ingredients:
1/4 C. salad oil
2 T. sugar
1/2 tsp. salt
1/8 tsp. pepper
2 T. white vinegar
3 drops hot pepper sauce
Salad Ingredients:
1/4 C. slivered almonds
2 T. sugar
1 head lettuce, torn into bite-sized pieces
3/4 C. chopped fresh parsley
11 oz. can mandarin orange slices, drained
2 T. sliced green onion
Instructions:
Combine all dressing ingredients in a tightly covered jar; shake well to mix.
Refrigerate. In an 8 inch
skillet, combine almonds and sugar. Cook over medium heat, stirring constantly
until sugar is melted and almonds are coated and lightly browned (5-8 minutes).
Spread on waxed paper; cool completely. Just before serving, in large bowl, toss
together remaining ingredients, almonds and dressing.
Makes 6 (1 C.) servings.
NOTE: You could also add 1 C. cooked, chopped turkey or chicken. Also 1/2 C.
dried cranberries would go good with this salad. |
