Suffolk Waldorf Salad

Prep: 10 min., Chill: 30 min. We've updated this classic with dried cherries and
spinach in place of raisins and lettuce. Apples are key, but make sure you use a
crisp snacking variety such as the heart-shaped Gala apple with its
yellow-orange skin and red stripes.
Ingredients:
1/3 cup light mayonnaise**I used regggular
2 tablespoons peanut butter**HEAPING
1 teaspoon lemon juice
2 large Gala apples, chopped
1 celery rib, chopped
1/4 cup dried cherries, chopped
1 cup spinach leaves
1/4 cup pecans, chopped
Instructions:
Whisk together first 3 ingredients in a large bowl. Stir in apples, celery, and
cherries; toss to coat. Cover and chill 30 minutes. Arrange spinach leaves on
serving platter; top with chilled apple mixture, and sprinkle evenly with
pecans. |
