Bridgeport Blueberry Jell-O Salad
Ingredients:
1 large or 2 small packages Black Cherry Jell-O
2 Cups boiling water
1 can Blueberries in heavy syrup
1 small can crushed pineapple
1/2 Cup chopped pecans (optional)
1 pint heavy whipping cream
Instructions:
Dissolve Jell-O in 2 cups of boiling water. Drain juice of blueberries into
measuring cup. Pour blueberry juice into Jell-O mixture. Pour 3/4 cup of Jell-O
mixture back into measuring cup and reserve. Add blueberries, pecans, and
pineapple with juice into Jell-O mixture and pour into 9 x 13 glass pan and in
refrigerator to set. Whip the heavy cream and add sugar to taste. After whipped,
gradually add the 3/4 cup reserved Jell-O mixture and whip. Pour onto set Jell-O
and put back in refrigerator to set again. |
