Cauliflower Salad
Ingredients:
1 medium head cauliflower
2 c. guacamole
1/2 Cup shredded Jack or Cheddar cheese
3 strips crisp cooked bacon
radish roses
Method:
Remove leaves and core from cauliflower. In covered saucepan, cook whole
cauliflower in small amount of boiling water 20 to 25 minutes or until just
tender when tested with fork. Drain well and chill. Place chilled cauliflower on
platter. Spread guacamole over entire surface. Sprinkle with cheese and bacon.
Garnish platter with radish roses. Makes 6 to 8 servings.
Note: You will never know your eating cauliflower and think that the whole thing
is creamy guacamole. Lot's less calories!
