Key Lime Black Bean Salad
Ingredients:
1-1/2 C. frozen corn, thawed
1 15 oz. can black beans, rinsed & drained
1/2 c. ea. diced red & green peppers
1 diced rib celery
3-4 scallions, sliced
1/4 C. Cilantro, chop. (or Parsley, if desired)
Dressing:
1 tsp. ground cumin
1/4 c. fresh-squeezed key lime juice
2 T. Tb olive oil
1/2 (4 oz.) can mild Green Chiles
S/P to taste
Method:
Whisk dressing & add to combined salad ingredients; toss to coat.
Serve on greens if desired & garnish with sprigs of Parsley.
Makes about 3 1/2 c.
