Mardi Gras Salad
Ingredients:
1 can petit pois (small peas)
1 can French style green beans
1-1/2 cups finely chopped celery
1/2 cup finely chopped bell pepper
1 small jar chopped pimento
1 small onion, minced
1 cup sugar
1/2 cup salad oil
3/4 cup vinegar
Method:
Drain juices from petit pois, beans, and pimento. Mix all ingredients in a
plastic mixing bowl with cover. Marinate in refrigerator for at least 12 hours.
Very colorful salad and delicious. (Serves 6)
