Salad with Guava Vinaigrette

1/2 cup guava flesh and seeds, cubed
1/2 cup white-wine vinegar
1/2 tsp. Dijon mustard
1 egg
juice of one lemon
1/2 cup olive oil
salt and pepper to taste
Ingredients for the Salad:
1/2 head red-leaf lettuce, rinsed with cold water and drained on paper towels
1/2 head green-leaf lettuce, rinsed with cold water and drained on paper towels
1/2 head butter head lettuce, rinsed with cold water and drained on paper towels
1/2 sweet yellow onion, coarsely chopped
1/2 cup sliced water chestnuts (optional)
1 cup guava fruit and seeds, skin removed and flesh cut into 1-inch cubes.
Preparation for the Guava Vinaigrette and Salad: In a blender, place guava,
white-wine vinegar, Dijon mustard, egg and lemon juice. Process until just
blended. With motor still running, drizzle in oil. Season with salt and pepper.
Blend until oil is incorporated.
Place lettuce, onion, chestnuts (optional) and guava in a large salad bowl. Add
desired amount of dressing, and toss to coat. Chill and serve.
Note: You should have some dressing left over. Try it on any salad or drizzled
over chicken or fish. Yield: 6 servings
