Thai Chicken & Spinach Salad

Ingredients:
1/2 cup (125 mL) Heinz Tomato Ketchup
2 tbsp (30 mL) each brown sugar, soy sauce
2 tbsp (30 mL) Heinz Apple Cider Vinegar
1 tbsp (15 mL) minced fresh ginger
3 cloves garlic, minced
3 skinless, boneless chicken breasts
1/2 tsp (2 mL) each salt and pepper
1/4 cup (50 mL) each peanut butter and vegetable oil
6 cups (1.5 L) baby spinach leaves
1/2 cup (125 mL) each bean sprouts, thinly sliced red onion and sliced red
pepper
Direction:
PREHEAT the barbecue to medium-high and grease grate lightly. Whisk the ketchup
with the brown sugar, soy sauce and vinegar. Stir in ginger and garlic. Divide
mixture in half. Brush one half evenly over chicken.
SPRINKLE the chicken evenly with salt and pepper. Grill for about 15 minutes,
turning as needed or until juices run clear. Remove from grill and rest for 5
minutes. Slice thinly.
BLEND reserved ketchup mixture with peanut butter and vegetable oil. Toss
spinach with sprouts, onion and red pepper. Drizzle with peanut mixture and toss
to combine. Top with sliced chicken and serve. Makes 4 servings. |
