Broccoli and Tortellini Salad Recipe

Broccoli and Tortellini Salad
Posted by: Ellie Wed, 28 Apr 2004, at 8:53 a.m.

Here's a different pasta salad that I found on another site. I used dried Barilla 3-cheese tortellini in it and used walnuts instead of sunflower seeds (that's what I had on hand). It is originally an All recipes recipe which was reviewed by 155 people and rated 5 stars. It's really that yummy broccoli salad with the addition of tortellini--a good change and a complete meal choice (great to take to work); also great for potlucks! Prep Time: about 10 Minutes. Cook Time: about 20 Minutes. Ready in: approx. 30 Minutes. Printed from All recipes, Submitted by Judy McNamara

6 slices bacon
20 ounces fresh cheese-filled tortellini (or any)
1/2 cup mayonnaise
1/2 cup white sugar
2 teaspoons cider vinegar
3 heads fresh broccoli, cut into florets
1 cup raisins
1 cup sunflower seeds
1 red onion, finely chopped (some people suggested less onion, so perhaps *to taste* would be best)

1 Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
2 Bring a large pot of lightly salted water to a boil. Cook tortellini in boiling water for 8 to 10 minutes or until al dente. Drain, and rinse under cold water.
3 In a small bowl, mix together mayonnaise, sugar and vinegar to make the dressing.
4 In a large bowl, combine broccoli, tortellini, bacon, raisins, sunflower seeds and red onion. Pour dressing over salad, and toss.
Note: This turned a bit brown the next day. I added more mayonnaise and it looked okay and tasted fine, but I would plan to serve it the same day for company.

Makes 12 servings
