Sweet and Sour Macaroni Salad
2 cups cooked corkscrew macaroni, or other macaroni
1-1/2 tsp. flax seed oil
2 Tbs. plus 2 tsp. sugar
2 Tbs. wine or rice vinegar
2 Tbs. cider vinegar
2 Tbs. water
1 Tbs. mustard
1/2 small cucumber, thinly sliced
1/2 small purple onion, thinly sliced
1-1/2 tsp. Parmesan or Romano cheese
Salt and pepper to taste
Rinse cooked macaroni with cold water. Place in bowl and stir in oil.
In a blender, add next 5 ingredients. Blend on low for about 30 seconds. Pour
over macaroni. Add remaining ingredients and toss well.
Marinate in the refrigerator overnight before serving.
