Hot Potato and Sausage Salad
Ingredients
6 potatoes 1/3 cup beef broth
2 tbs. canola oil 1 lb. smoked sausage, sliced thin
1 chopped onion 1 chopped bell pepper
1/2 tsp. garlic powder 1/3 cup red wine vinegar
1/2 tsp. salt 1/8 teaspoon black pepper
1/2 tsp. cayenne pepper 1/2 tsp. paprika
Directions:
Cook potatoes, unpeeled in boiling salted water until tender. Drain & remove
skins. Cut potatoes into bite-sized pieces, cover to keep warm & set aside. In a
large frying pan, heat oil over medium heat. Add sliced sausage. Stir frequently
until lightly browned. Remove sausage from pan & add to potatoes. Place onion
and bell pepper into Pan. Cook over medium heat for about 2 to 3 minutes. Add
garlic powder, vinegar, broth, cayenne, salt, and pepper. Cook until mixture
boils & then cook 1 minute more. Pour onion & pepper mixture over potatoes and
mix lightly. Sprinkle top with paprika.
