Mediterranean Potato Salad Recipe


Mediterranean Potato Salad              



2 lbs. Red Potatoes, peeled, cut into quarters
3/4-cup Caesar Dressing
1/2 cup Grated Parmesan Cheese
1/4 cup chopped fresh parsley
1/4 cup chopped roasted red peppers
1/4 cup sliced black or green olives


Cook potatoes in boiling water 10 to 12 minutes or until fork-tender; drain. Pour dressing over potatoes in large bowl. Add cheese, parsley and peppers; olives, toss lightly. Serve warm or chilled.

Serves: 8 to 10
